I started the New Year fabulously. I took a month off work…to relax a bit. Ha ha, who am I kidding??!!! Relax!! Yeah, right! But let’s make it clear, I love keeping myself busy, not that i need to worry that I’ll ever get bored with my 2 kids!!
Today, we decided that it’ll be a ‘Bake a Cake Day’. So my 11yr old wanted to bake it himself. He loves cooking and he’s pretty good at it too. He’s good at the cooking part, the cleaning and washing is up to mummy but anyways. He wanted to do a carrot cake. I have a very simple recipe that a friend of mine told me about and I’m gonna share it with you.
- 3 medium sized carrots, shredded
- 3 eggs
- 3/4 cup vegetable oil
- 2 cups flour
- 1.5 cup sugar
- 1tsp baking powder
for the icing:
- 1 cup sugar
- 1 cup chocolate powder
- 1/4 cup milk
- 50g butter
Add carrots, eggs and oil in a blender for at least 5 mins. Mix flour, sugar and baking powder.
Pour the carrot-egg-oil puree in the dry ingredients. Place in an 8-inch cake pan and bake for 45 mins
For the icing, mix sugar, chocolate powder, milk and butter in a saucepan and mix it well. When it comes to a boil, wait 1 minute and turn off heat. Pour over the cooled cake.
It was delicious.
